English Muffin Tuna Melts

Over the weekend, I made one of those dinners that just blew us away.  Recently I'd been craving tuna melts, but I didn't really feel like spending a few dollars on a small pack of English muffins at the store so I decided to make my own for the first time.  These homemade English muffin tuna melts tasted like something you'd get at a gourmet sandwich shop.  Every bite was perfect and delicious, and way better with the homemade muffins.

I made the following changes:  I used coconut oil instead of shortening, as we've been baking with coconut oil more for health reasons.  I also used almond milk instead of regular milk.  I followed some reviewers' suggestion to bake them at 375 for 7 minutes on each side.

To make the tuna melts, split the English muffins on half and place on the cookie sheet.  For the tuna, I mixed 1 can tuna (drained), 1 chopped hard boiled egg, 2 Tbs. mayo, 1 tsp. mustard, 2 tsp. pickle relish, and salt, pepper, garlic powder & dried minced onion to taste.  Spoon the tuna mixture onto the English muffin.  Top with chopped avocado, sliced tomato and a slice of cheddar cheese.  Bake at 375 for 10 minutes.
